Not fried. Not stewed. Just clean & fresh okra with a simple recipe for reducing the sliminess, on the stovetop, without dunking it in a deep-fryer. If you want a simple way to prep okra, and how to cook it for its natural flavor, try this. I don't mind the sliminess (it's healthy & can thicken dishes) but it's a big turnoff for a lot of folks. If you're new to the vegetable, a clean saute may be the best way to experience the flavor & texture. Okra must be cooked within two days of buying it. It will go bad quickly. I'm from Mississippi where okra is standard fare. But even I shiver at the sight of slimy, boiled okra oozing its way out of a jar. So, I understand the hesitancy to try the odd vegetable. I like its clean flavor. It's unlike anything else.

Here's my recommendation for trying okra without the sliminess:

1. Slice the okra in even pieces.
2. Heat a skillet to hot & add oil or ghee.
3. Add the okra & let sit until brown on one side.
4. Stir okra & add salt.
5. Keep sauteing until other side browns.
6. Salt & pepper to taste.
